Epicure Azteca Tortilla Soup

It’s that time of year again! A new Epicure catalogue has launched with lots of new products and meal solutions. I thought it might be fun to review some of the new products and share my thoughts.

If you aren’t familiar with Epicure it is a local to me Canadian company that aims to inspire clean eating through their line of gluten free, sugar/salt/fat conscious line of spices, mixes, and meal solutions.

In the spirit of full disclosure I should mention that I am an independent Epicure consultant! That in no way means I will withhold my honest opinions on these products. This is not a sponsored post in any way and I have purchased these products at my own cost.

So, on to the soup!

I followed the directions on the package using the water option instead of broth. The ingredients and directions are extremely simple. You boil the water and seasoning, add in tomatoes, boil again. Meanwhile rinse the black beans. Add beans and corn and simmer.

To serve top with Greek yogurt, cheese,avocado, lime juice, and tortilla chips if you wish.

Now in all honesty I found the soup incredibly bland after following the directions on the package. Next time I will definitely use broth over water.

After trying it as prepared according to the package directions I went ahead and added in some salt, taco seasoning, red garlic sensel, and a few other things to give it more of the flavour I was expecting/looking for.

I also added two chopped Roma tomatoes because I like chunks or tomatoes in my taco soup.

I don’t mind at all that I had to add salt to this soup. In fact I think that is a good thing given how many packaged mixes and soups are sodium heavy. I’m not one who adds much salt in my cooking but I will when it’s needed. I will admit I wasn’t expecting to have to add so many extra ingredients/spices to this soup to make it more flavourful. On the other hand it’s easier to add ingredients to your liking then to try to cover up a flavour you don’t like in a package mix.

Once the soup was done and topped with the toppings mentioned above and cilantro I very much enjoyed it but again I don’t think I would of enjoyed it very much had I not tweaked it to my liking.

With that being said would I make this again? Absolutely! I would make it using broth and set out knowing what I want to add. I’m also looking forward to trying this with the addition of veggie ground round (or ground beef for the meat eaters). I would also use this mix in other recipes, I’m thinking a taco casserole.

This product is not at all what I was expecting as a quick meal solution/soup mix but it’s a product I will happily use as an ingredient in my own creations.

Easy Like Sunday Morning…

Easy my ass! I’ve been laying here awake since 5:30 am (it’s now 7:18am) and I’m yet to get up because I don’t want to wake up Jacob! We can’t have another early morning for him because early mornings lead to ridiculously cranky afternoon and meltdown evenings! So for now I lay here and be thankful for my phone and the internet! The past few days have been tough because Jacob and I have both had a cold. It never fails that I get afflicted with sickness in early September. I took Friday off work and spent the day in my pj’s. It was a much needed day of rest. Saturday was much the same but we did venture to get groceries and got some fresh air out on our patio briefly. I feel like this time of year is my planning time. Planning the rest of the year! Thanksgiving, Halloween, Christmas, etc. I love Fall. The colours, the crisp leaves, the leggings, hoodies, boots! The pumpkins, the food! Speaking of food! Jacob and I baked this lovely banana bread yesterday morning. The recipe can be found HERE. He absolutely loves baking! He asks every weekend if we can bake! He loves to share his (our) creations. Yesterday he took half the banana bread to Grandma and Grandpa and shared the rest with his cousins. He pretty much melts my heart daily. Well my friends I’m going to be brave and attempt to sneak out of bed (only because I really have to pee). Stick around this week as I’m planning on sharing/reviewing some new Epicure products as well hopefully sharing a post on the CSA box we’ve been getting all summer!

Good For You Protein Balls

Today’s kitchen adventure: Protein balls! These little beauties are just sweet enough to ward off a cookie craving while being packed full of good for you ingredients and protein!  Perfect as a mid afternoon snack, after the gym, or desert! 


Ingredients 

1 cup rolled oats

1/2 cup natural peanut butter

1/4 cup Epicure protein powder

1/4 cup ground flax

1/4 cup honey

2 scoops Epicure Cocoa açai

1/4 cup mini dark chocolate chips

1/4 cup unsweetened coconut 


Method 

Simply mix all ingredients into a large bowl and mix well. Once combined scoop and roll into small balls. Roll in coconut and place in sealed container to store in fridge. 

Using the above recipe I got 18 balls. Which breaks down to 4.4 grams of protein each! 


You can customize these however you like! Try adding things like dried cranberries, nuts, cinnamon, etc.

Peppermint Matcha Hot Chocolate Brownies! 

I was asked to create a treat for our Epicure team meeting tonight using this months customer special, Epicure’s delicious Peppermint matcha hot chocolate!!  This is what I created… 

 These brownies are chocolatey, chewy, and have a hint of mint!! I always feel like St. Patrick’s day is the perfect time for mint/chocolate treats! I’m sure Leprechauns love mint!  Anyways,  I made these brownies in Epicure’s Perfect petites pan but you could do them in a traditional pan if you don’t have the Perfect petites. If you ask me everyone should get the Perfect petites pan because it’s perfect for making adorable mini treats!!!  On to the recipe!  

Ingredients  

 

  • 1 cup butter – melted
  • 2 large eggs
  • 2 tablespoons egg whites (or an extra egg)
  • 2 tsp vanilla 
  • 1 cup sugar 
  • 1 cup flour 
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/2 cup Epicure’s peppermint matcha hot chocolate mix (dry)
  • 3/4 cup chocolate chips (mint chocolate for a more minty taste)

Method

  • Preheat oven to 350 degrees 
  • In a mixing bowl combine melted butter, sugar, eggs, egg whites, and vanilla  
  • In a second bowl whisk together flour, baking powder and salt. 
  • Combine dry and wet ingredients and stir until just combined.  
  • Gently fold in hot chocolate mix and chocolate chips.    
  • Place petites pan on a cookie sheet. Using a basting brush lightly grease Perfect petites pan.  
  • Divide batter evenly     
  • Bake for 22-25 minutes until tooth pick inserted in centre comes out clean.   
  • Remove from pan and allow to cool on rack.   
  • Enjoy!    

A Fresh Start… 

As the first day of January in this brand new year winds down I thought I’d share my day and my thoughts with you! 

As some of you know I am taking part in Epicure’s new healthy living program Good food real results. Today was my kick off day! While I can’t share specific recipes and program material, I can show you what I’m eating these days!! I’ve decided that sharing my food and blogging more both things I want to do to help keep myself on track! 

My meals today have been healthy and delicious! Full of clean, whole ingredients.  

    
   
I’ve never been one to jump on the resolution bandwagon or get into that “New year, new me” mentality. However this year the things in my life just line up as January being a starting point. I don’t want to call these things I’m taking part in “resolutions”,  I see them more as goals, opportunites and experiences! 

One of my goals is more family time. We send lots of time together in general but I mean uninterrupted family time! No phones, no tv, no internet! Today my little family ventured to the duck pond to feed the ducks and go for a walk! Afterwards we had a quick visit with Grandpa and Grandma. Jacob was a big fan of both.  

    
 
Muffin didn’t come on our like family outing because she has an ear infection. Her and I did venture out for a walk this morning and discovered a little fairy garden in our neighborhood.  I love seeing thoughtful little things people do to make others smile.

 

The rest of my day has been pretty quiet. We took down the Christmas decorations, did some planning for the week and enjoyed the sunshine.

I hope everyone enjoyed the first day of the year. 

Gingerbread Cupcakes 

I love this time of year! Christmas time is so magical! This year even more so for me thanks to Jacob! Im looking forward to all things Christmas. Next week one of my best friends is hosting a Christmas party and requested I bring gingerbread cupcakes. Not wanting to disappoint I did my research, combined and tweaked some recipes and came up with these moist, delicious cupcakes featuring Epicure’s gingerbread spice! 

  
INGREDIENTS 

  • 1/2 cup butter
  • 1/2 cup brown sugar 
  • 1/2 cup milk
  • 1/2 molasses 
  • 1 egg
  • 1 1/3 cups white flour
  • 1 teaspoon real vanilla
  • 1/2 teaspoon baking powder 
  • 1/2 teaspoon baking soda 
  • Pinch of salt
  • 2 teaspoons Epicure Gingerbread spice 

*Allow milk, butter, and egg to come to room temperature before beginning  

 

METHOD 

Cream butter and sugar together in mixer.  Add in egg, milk and vanilla.  

 

Add in molasses. Mixture will look chunky.  

 In a small bowl whisk together flour, baking soda, baking powder, salt and Epicure gingerbread spice.

With mixer running at low speed add dry ingredient mixture to wet. Once added mix throughly on med/high speed for 30 seconds. Use a spatula to scrape down sides and mix for another 10 seconds.  

 Fill 12 paper lined muffin tins 2/3 full.

 
Bake for 20 minutes in preheated oven – 350 degrees.  

 Allow to cool on wire rack before frosting. 

I frosted mine with cream cheese frosting and used a tiny fresh baked gingerbread man to decorate!

A Little Life Update 

Hi friends! I’ve missed you!  Jacob is napping so I thought I’d take a few minutes and say hello! I’ve been busy chasing my tiny terror everywhere! He’s small but he can move!! 

Last week I did something I’ve been considering for a long time, I signed up with Epicure as an independent consultant. I can’t even begin to tell you how excited I am about this. I’ve been using and loving Epicure products for a couple years now. Any of you who follow me on Instagram know how often I share my creations featuring Epicure spices, blends, and cookware! I love that their products are low/no sodium, healthy, gluten free, and many are certified non-Gmo! I also love that it’s a local, woman run company!  I look forward to sharing my Epicure adventures with you all!

On the home front we had a koi pond emergency this past Saturday. We aren’t sure what exactly happened but the pond drained from 5 feet to 1 foot over night. Needless to say we had our hands full trying to relocate and save our fish! Between the raccoons, heron and leak it’s been a tough year for those suckers! Rest assure they are safe… They will be spending the winter in our hot tub. We had to quickly seal the jets with pond tape but it’s done and they are as happy as can be!  I bet we have the only indoor pond on the block! 

I was lucky enough to receive free passes for The Westcoast Christmas show this past weekend. I thoroughly enjoyed browsing, shopping and seeing Santa!  

  

   

 

The weekend prior we got to check out the Langley Christmas show and I picked up some great local products! 

 We’ve also been busy celebrating Kevin’s birthday and our 5th wedding anniversary! Seriously where does the time go??? Wherever it goes, we’re exhausted!
