Fort Langley Cranberry Festival

Every year Fort Langley plays host to the annual Cranberry Festival. Yesterday was that time of year again and Kevin and I decided to check it out with some family and friends.

I’ve been to and volunteered at this event many times over the years. It gets a little bigger every year. This year I notice the local cranberry theme was weak and the whole event had a very farmers market feel about it. None the less I enjoyed my day with family and friends.

Fort Langley is a beautiful little village that lays along side the Fraser river with a rich history that affects not only British Columbia but the whole country of Canada! Fort Langley is the location where, a century and a half ago, Hudson’s Bay Company established it’s fur trading post! The post grew to trade with the First Nations of the West Coast. The trading post grew, evolved, and influenced history in many ways, eventually leading to the creation of the colony of British Columbia. A little history lesson for you! You can visit the Fort itself and learn all about our country’s rich heritage, Or you can spend the day browsing the many unique shops the Village has to offer! The area boosts a number of amazing wineries, restaurants, and parks. The Fort to Fort trail is a gorgeous walk!

Back to the Cranberry festival! We saw many interesting offerings from local artists, bakers, crafters, florists, etc.

We decided to take on the issue of lunch by visiting some of the food trucks and sharing a bucket of donuts. We aren’t proud of it, but it happened 😉

Other then the food we saw some giant pumpkins, a giant beaver and just enjoyed browsing and our afternoon together. We walked away with a few purchases and some fun memories! If you’re ever in the area I highly suggested checking out Fort Langley as it is a beautiful little village!

I hope everyone has a great Thanksgiving and enjoys their time with family and friends.

Color Me Rad Vancouver 2013

Life isn’t about what you can’t do it’s about what you can but you can’t do anything unless you try!

Today despite my health issues I conquered another 5km race! My over all time was 42 minutes and 5 seconds which is slower then past times but I’m still proud for crossing that finish line.

I’m sure most of you have heard about races like Color Me Rad, where participants get bombarded with a multitude of colors over the duration of the course! Well let me be the girl to tell you it’s everything your rainbow dreams are made of and them some!!!

20131005-165909.jpg
Along with the color bombs comes a whole whack of fun! If you’re looking for a timed serious race then this my uptight reader is not your cup of tea! If you’re looking for a no pressure, fun filled party course look no further! The course is 5 km and has four different color stations. I can tell you a few things from experience!!!

1) Wear the sunglasses that come in your race packet! If you have sensitive eyes or contacts I’d consider safety goggles!

2) Don’t wear anything you aren’t willing to destroy! Including shoes! I don’t even need to explain why! I took a change of clothes and an old fitted bed sheet to protect my car seat.

3) If you want lots of color experience stay on the edges of the pack as you run through the color zones. Color bombers line the sides and the closer you are to a bomber the more color you wear!

4) Roll with the punches! There are lots of people walking, running, chasing each other, and partying on the course. Things didn’t seem to stick to time guidelines and if you want to know your time track yourself. There will be areas that you have to walk in as the color zones get congested! It’s a party not hardcore “real” race!

5) Keep your mouth shut! No seriously that color may only be corn starch but it doesn’t taste too great!! If you have breathing issues, sensitive lungs, or concerns, consider wearing a bandana over your face or a painters mask. You won’t look crazy I saw many!

6) Don’t be afraid to look crazy! For a while I ran behind a 2 legged zebra! Dress up and you will fit right in! Tutu’s are a popular choice but I saw everything from clown costumes to zebras… For serious!

7) Run with friends! This isn’t a run you’re gonna wanna tackle alone! It’s way more fun to chuck handfuls of color on your friends then on your self!

8) Don’t bring your expensive camera!! As tempting as it is because there are some awesome photo opportunities that color powder travels and finds its way into every crack and crevice.

9) Bring your phone because you will want photos and its really easy to lose running buddy’s in the crowd. BUT… Put your phone in a ziplock bag to keep it safe!

10) Just have fun! These runs are more for the experience then the actual run factor.

Today was awesome and I’m thankful my body allowed me to take part in such a fun event with awesome friends!

Thankful Thursday ~ October 3

Hope everyone had a great Thursday! Mine was productively busy.

My friend Angie has been doing “Thankful Thursday” posts now for a few weeks and thought I’d jump on board! You can check out her Thankful post Here!! PS she’s kinda awesome!!

So tonight after I got home from the gym I spent some time thinking about all the things I’m thankful and let me tell you the list is vast and varied! So I’ve picked a few random ones to share with you!

1) I am thankful for Emma. She is turning into such a little grown up! This week we have been having tea together and trying all the different David’s teas we picked up on our shopping trip last Sunday. Our favorite is currently Birthday cake.

2) I am thankful to live in a country and have coverage through Kev’s work that offers me access to medical and dental. Today I put on my big girl pants and went to my dentist appointment without any stress or fear! I met Matt my new hygienist and he’s great, I’m very comfortable with him.

3) I am thankful for having a husband who takes me to do simple things I’m sure he could live without. Today he took me to get my toe nails painted, my eye brows waxed, to subway for lunch, and we wandered around Value Village! It is nice to have company on my little adventures!

4) I am thankful for having the ability to have a well stocked fridge and pantry! I am often insanely indecisive about food and having many options is nice.

5) I am thankful for the smells and sights of autumn! The leaves are so gorgeous and the sunshine today was amazing!! The air has a fresh crisp scent and I love the cozy feeling this time of year brings!!

I could keep going but it’s time for some Muffin snuggles!!!

What are you Thankful for today friends?

Rustic Camping At Blue Lake Resort

Despite popular believe amongst my friends I am in fact a country girl at heart! I grew up on a farm and dirt & mud don’t phase me. Of course I don’t deny enjoying the finer things in life like my Lululemon collection, white tipped gel nails, pedicures, wine, and fancy hotel stays on our vacations! This however doesn’t mean I don’t know how to camp! I can and have stayed in a tent on many adventures. This past weekend Kevin and I decided to sneak away for a little rustic camping experience of our own!!

On Thursday afternoon we packed up Kiana (yes our car has a name, don’t judge) and headed up to Boston Bar BC.

20130812-172742.jpg
As you can see Muffin and I were very pleased by this!!! After a brief stop at our favorite diner in Hope and a couple hours of driving we arrived at Blue lake resort and checked into their Eco cabin!!!

20130812-173502.jpg

20130812-173528.jpg
The Eco cabin doesn’t have a whole lot of visual appeal but what it lacks in that department it makes up for in privacy and amazing mountain views!!

20130812-174141.jpg

20130812-174201.jpg
The interior of cabin is much less rustic and I was intrigued to know that all the building materials in this cabin were reused from other projects! Of course there is no power or running water, so city girls need not apply! Inside the cabin was a cozy bed, dining table, futon, wood stove and dishes for two!! Oh and a composting toilet on the covered deck! Very handy if you want to avoid the 1/3 km walk to get to the actual bathroom at the general store and the 1/3 km walk back to the cabin!!!

20130812-174720.jpg

20130812-174737.jpg
Once we unpacked and set up our temporary weekend home we trekked down to the lake. The lake is gorgeous and was the perfect temperature for swimming and relaxing on hot summer days. Apparently the fishing is decent as well.

20130812-175610.jpg

20130812-175655.jpg

20130812-175927.jpg
After our walk we headed back to the cabin to make dinner and watch the sunset. The view off the cabin deck was priceless. The stars were plentiful and Kevin and I sat out there for hours talking. Unfortunately the area is under a campfire ban but we found other ways to pass the time!!

20130812-180155.jpg

20130812-180228.jpg

20130812-180244.jpg
I will be honest with you and tell you the Eco cabin isn’t for the faint of heart! It is located at the opposite end of the resort from everything else. Privacy aplenty! Meaning more wildlife, more darkness, and more unidentifiable noises!! Oh and bats!!! The whole weekend was insanely hot and I spent a good portion of the time in a bra or bathing suit. I learned quickly that if you sport your super sexy headlamp bats will swoop at you on the deck to catch the Mosquitos the light attracts! This in turn leads to panic.

20130812-180610.jpg
I should also tell you that the abundant wildlife includes a super cute pack rat that likes to work all night as soon as the lights go down! By work I mean make a lot of noise running through the walls and roof of the cabin. I was in panic mode for a few hours thinking there were critters inside with us but I learned thanks to my spy skills the cabin was in fact wildlife free. Well unless you count Muffin as ferocious wildlife.

20130812-181014.jpg
But seriously I can tell you nothing except a few bees got inside the cabin with us. I can tell you this because I left a snack out for any visitors and it wasn’t touched all weekend!! Our covered deck was another story!! Of course it is doorless so it’s pretty much free territory! We had a lizard visit us while we ate lunch and later in the evening the worlds biggest beetle.

20130812-181437.jpg It was indeed an adventure!

The resort boasts some amazing walks and hikes. We took in the sights of the beautiful waterfall hike and the other easier trails before conquering the big mountain hike!

20130812-182204.jpg

20130812-182224.jpg On our first hike we discovered the area is home to millions of tiny frogs and snakes. The frogs amused me for hours.

20130812-182349.jpg

20130812-182452.jpg
My favorite adventure of the trip was the hike up to the lookout point high above the lake. The hike itself is fairly intense and quite an elevation gain but well worth it. It proved to be a great workout in the midday heat. The view at the top is rewarding and stunning. It really puts into perspective how small and insignificant we are in comparison to the vastness of the mountains.

20130812-185226.jpg
Once we were back on flat ground we spent most of our day in the lake. The swim out docks provided hours of tanning and relaxation. The lake was amazing. The views were breath taking and the quiet time alone with my husband was perfection. I was thankful for every minute.

20130812-185836.jpg
In all it was a fantastic weekend. The resort itself has many other less rustic cabins and a large lodge, all of which looked appealing on the outside. They also have many camper/ tenting sites. They offer boat rentals, have shower/ laundry facilities and a well stocked store incase you forget something. The resort has a few areas that could use some TLC but it is a work in progress and I’d definitely return! The staff were all very friendly and helpful. That atmosphere among the campers was upbeat and everyone seemed happy to interact with everyone else.
It isn’t a five star hotel my friends but it is a great little resort with a homey feeling and lots to see and do!

I can honestly tell you I have really realized a lot about who I am and about my life since I’ve gotten sick and watched my brothers health fail. I think what’s hit me the most is the realization that if you can do it now, do it now because tomorrow you might not have that luxury!!! Whether its staying in a rustic cabin, conquering a fear, swimming halfway across a lake or hiking up a mountain… Do it while you can in case the day comes you can’t.

Homemade Strawberry Jam

Every Summer when the strawberries are ready I go out to the farm and pick a few buckets full. Okay fine, I eat my weight in strawberries while picking a few buckets full, don’t judge me!!! The farm berries are fresh, juicy, sweet, and a perfect red color.

Upon bring my bounty home I always make sure to freeze a few bags for making out of season Strawberry jam! Well that out of season jam making adventure occurred yesterday because I had finally run out of the jars I made in the late Summer. The thing about homemade jam is the jars seem to disappear quickly once your friends and family learn of their presence in your pantry!

20130323-071956.jpg
Making jam isn’t difficult as long as you do your prep work and work quickly once you start the process. There are many jam recipes out there but I always stick to the tried and true recipe that my Mom used growing up.

Ingredients
7 cups of White sugar
3 1/4 cups crushed Strawberries
1 package liquid Pectin
1/4 fresh Lemon juice
1/2 tsp butter

20130323-084341.jpg

As you can see I like to prep everything before I start and that includes sanitizing my jam jars. This is as simple as boiling a large pot of water and letting the jars “cook” for three to five minutes. I leave them in the hot water bath until I’m ready to use them.

20130323-084552.jpg

20130323-084601.jpg
I repeat the hot water bath with the lids and rings, much later after the jam has a chance to set up and I’ve sealed the jars with wax.

On to the fun part!

Method
Combine strawberries, sugar, lemon juice and butter in a large pot and continue to stir over high heat until mixture reaches a hard boil. Once the mixture is boiling hard add your pectin while stirring and continue to let mixture boil hard for 60 to 90 seconds. Be sure to stir the entire time to avoid scorching the jam. Remove from heat

20130323-084944.jpg

20130323-084955.jpg

20130323-085004.jpg
At this point you hopefully don’t have too much foam formed but if you do just skim it off. Once you’re done you can fill your jars. I use a funnel to fill my jars to avoid contaminating the rims of my jars. Fill your jars being sure to leave space for a wax seal.

20130323-085258.jpg
Allow your jam a few hours to set up and then seal with melted food grade wax and apply lids!
Number of jars will depend On the size you decide to use. I get four medium size jars out of a batch.

Weekend Wonders-I’m Aware It’s Wednesday

So my weekend wasnt all cooking and baking! I did a few other things and had a bit of relaxing time! Of course I’m not as intense in the relaxation zone as Muffin is!

20130309-134403.jpg
I keep telling you life is hard! So hard in fact I was forced to have a mud bath.

20130309-134715.jpg
It may look odd but the mud leaves my skin so soft and it is actually very calming. They sell it by the bottle at Spa Utopia! Try it!

I spent some time gardening and was excited to see some of my seeds have sprouted! Very giddy to see the Brussels sprouts sprouted!!

20130309-134945.jpg

20130309-135014.jpg
We got a delivery of lumber for the new stairs. Complete with crane truck!

20130309-135213.jpg

20130309-135237.jpg
See I to you I did other stuff!! However I did do more baking, I baked cupcakes for Sandra’s birthday party! Vanilla bean filled with Nutella and frosted with chocolate buttermilk. Very rich and delightful.

20130309-135419.jpg

20130309-135444.jpg
While they were baking Maple and I played fetch for almost an hour! She is still full of puppy energy! Love her! Thankfully she didn’t mind my cowgirl chic look of muddy boots and lulemons! I’m sexy!

The party was laid back and full of laughs and good conversation. I guess it’s a sign of changing times and our age. I’m glad I went. I’m glad I got to catch up with friends and cuddle Lincoln, the puppy! I was exhausted by the end of the night and very glad to come home to Kevin for a Saturday night of couch cuddles.

I woke up early Sunday morning and needed to get some fresh air, so Emma and I headed to the Sunday market and bought flowers. We got flowers for Krista and my mom as well as for me.

20130310-124942.jpg
I just feel better about life when there is fresh flowers in the house. After we got the flowers situated, Krista and I took Emma and the dogs for another walk to our local dog boutique for some treats!

20130310-125103.jpg
I am very excited that the two new pet-stores have opened in Cloverdale. It is nice to take Muffin for a walk and buy her a treat. No kids what can I say!

20130313-123639.jpg

This week at work has been quiet and good minus the fact I have a horribly sore throat.

20130313-124113.jpg
I’ve been alternating between cuddling Muffin, drinking tea, and whining about death being near!

Stuffed Pizza Rolls

20130309-122803.jpg

A few weeks back I posted about making the stuffed pizza rolls using the Pillsbury crescent roll dough. I loved them but Kevin wanted to try the version my girlfriend made. I have to admit after seeing the photos of hers on Facebook I was eager to try her version! Of course being me I had to tweak it to my own liking! I added pizza sauce inside the rolls instead of just using it for dipping.

Ingredients
1 jar of pizza sauce
1 can of Pillsbury grands biscuits
16 slices of pizza pepperoni
1/3 cup chopped green pepper
1/2 cup diced red or sweet onion
1/4 cup diced hot peppers (optional)
1.5 cups shredded cheese
1 egg
1 tablespoon garlic powder
1 tablespoon Italian seasoning
2 tablespoons parmesan cheese
20130309-124853.jpg

Method
Flatten the biscuits into rounds and spread with pizza sauce. Add peppers and onions. Top veggies and sauce with 2 slices of pepperoni and cover in cheese.
20130309-130101.jpg

Carefully bring up edges and pinch together to seal and form a ball.

20130309-130149.jpg
Place in greased cake pan and continue until all 8 balls are formed. Brush pizza rolls with egg wash and sprinkle with Italian seasoning, Parmesan, and garlic.

20130309-130345.jpg
Bake at 350 degrees for 18 to 20 minutes. Sprinkle with remaining shredded cheese and return to oven briefly to let it melt.
Serve with pizza sauce for dipping!

Enjoy!

Homemade Chewy Chocolate Chip Cookies!

Here it is friends! My most requested cookie recipe! Chewy Chocolate Chip!!!

20130308-170402.jpg

These cookies are chewy in the centre but have a nice crisp edge! I made a half batch today but this is the full recipe and makes about 28 good size cookies.

Ingredients

20130308-173121.jpg
1 cup of room temperature butter
1 cup white sugar
1 cup brown sugar
1/2 tablespoon vanilla
2 eggs

2 cups flour
2 1/4 cups oats
1 tablespoon baking soda
Pinch of salt

1.5 cups chocolate chips

Method

20130308-173459.jpg
Cream butter with both sugars. Blend in egg and vanilla.

In a separate bowl combine all ingredients and stir.

Add dry to wet and mix until just combined. You can use your hands, a wooden spoon, kitchen aid mixer. Whatever works for you!

20130308-174052.jpg

I put six on the ungreased cookie sheet at a time. I use a cookie scoop for uniform size but if you don’t have one scoop about 2 tablespoons into a ball and drop onto sheet.

Bake for 12-14 minutes at 350 degrees. The center always look a touch under done if you like a crisper cookie bake a little longer!

20130308-174439.jpg
Let the cookies cool on a rack. Store in a tightly sealed container. Enjoy!

Lovely Lemon Bars

So I’m at work after an extra day off on the weekend. I caved on Sunday and called into work and took the night off after realizing I just didn’t feel up to going into work. I guess it is all part of the process and I just have to get use to it.

Onto happier, sweeter topics! On Saturday I had some free time and decided to whip up a batch of lemon squares. These little delights require a bit off effort and a lot of eggs but are indeed worth it!

20130305-103230.jpg

Ingredients
Crust
2 cups of flour
1/2 Powdered sugar
2 tablespoons cornstarch
Pinch of salt
3/4 cup butter

Filling
6 eggs
2 1/4 cups sugar
5 tablespoons flour
Zest from one lemon
1 1/4 lemon juice
1/4 cup milk or cream

20130305-103858.jpg

20130305-103937.jpg

Method
Crust
In a large bowl combine dry ingredients (I sift the powdered sugar in) and cut in butter. Mix with hands until mixture resembles crumbs. Press mixture into a greased pan. Bake at 350 degrees until edges turn golden about 15-20 minutes. Prep filling while base is baking!
20130305-104852.jpg
Filling
Mix sugar and flour together in medium bowl. Lightly beat eggs in a bowl and add in sugar, lemon juice, zest and milk. Once mixed add liquid ingredient mix to the sugar/flour mix. Stir everything together until we’ll mixed.

20130305-105050.jpg
Pour filling mixture over base and return to oven for 15 -20 minutes until filling mixture sets.

20130305-105302.jpg
Cool on a rack and store left overs in the fridge or freeze.

20130305-105409.jpg

20130305-105436.jpg
I like to use a tart pan to make bars so I can remove the sides to make cutting easier but a lasagna pan lined in foil with extra foil over the edges to lift out works as well.

I like to dust these with powdered sugar before serving, or eat them over the kitchen sink… Which ever 😉

Rainy Day Baking – Cheese Biscuits

It is raining sideways! It has been raining for over a week straight!!!! I’m so over it! I woke up this morning and decided to make a country breakfast! I whipped up a batch of cheesy biscuits to make egg and bacon breakfast muffins with organic fingerling home fries!

20130302-134921.jpg

These biscuits can be made with or without the cheese and cut to any size you desire. They are wonderful fresh out of the oven still warm with a pat of butter, jam, or whatever you love… Lemon curd! They are super easy to make and beat the pants off those can biscuits! Give them a try!

Ingredients
3 cups flour
4 teaspoons baking powder
1 tablespoon sugar
Pinch of salt
3/4 teaspoon cream of tartar
1/2 cup butter
1/4 cup shortening
1 cup buttermilk (if you don’t have buttermilk mix 1 tablespoon of lemon juice in your cup of milk and let stand five minutes)
1 cup grated cheese (optional)
I’ve added herbs, garlic, bacon bits, chives, etc in the past with great results. These biscuits are very versatile.

20130302-140242.jpg

Method
Mix together dry ingredients and cut in butter and shortening. Mix with hands until mixture forms crumb texture. Pour in buttermilk and work together with hands. Once dough begins to form add in cheese or other yummy bits of your choosing!

Turn mixture out onto floured counter and roll out to about 3/4 to 1 inch thickness.

Use a drinking glass or biscuit cutter to cut dough into rounds. Place on ungreased baking sheet and bake in preheated oven (425 degrees) for 13 – 15 minutes…less time if you make smaller sized biscuits.

Place biscuits on cooling rack as soon as they come out of the oven!

Serve warm with butter, jam, etc. or top them with an egg and bacon for a delicious breakfast muffin!

This morning I only made a half a batch and they still turn out perfect!

Let me know if you try them and what you think!
